Parmesan and Pecan Crusted Tilapia

A fun twist on a light tasting fish. What a way to get creative with different tastes and textures.

We made home made baked sweet potato "fries" and roasted Brussels sprouts on the side. 

Ingredients:

  • 16 ounces tilapia 

  • 1 cup parmesan cheese 

  • 1 TBS paprika 

  • 1 TBS dried parsley 

  • 1/4 cup finely chopped pecans

  • 1 TBS olive oil 

  • 1/2 tsp salt

  • 1/2 tsp pepper 

Directions:

1. Preheat the oven to 400 degrees 

2. Wash and completely dry tilapia 

3. Mix parmesan, pecans, parsley, paprika, salt and pepper together in a bowl 

4. Coat font and back of fish with olive oil 

5. Rub fish into Parmesan mixture (both front and back)

6. Sprinkle any remaining mixture on the top of fish 

7. Bake for 10 - 13 minutes until fish is cooked and Parmesan is golden 

Things to note:

Serves 4, four ounce pieces of fish
