Pineapple Avocado Chicken Salad

When you are in need of lunch to-go, there is always away to jazz it up. This is a great mix of protein, carbs and fats - all in your salad. 

Ingredients:

  • 1 cup spinach

  • 3/4 cup pineapple

  • 1/4 cup sliced cucumbers

  • 1/2 cup diced chicken 

  • 1 Tbs olive oil mayo 

  • 1 handful of thinly sliced onion

  • 1/2 squeezed lemon and or 2 Tbs balsamic vinegar to dress the salad

Directions:

1. Lay the spinach at the bottom of the bowl or Tupperware 

2. Place pineapple layer over spinach

3. Add cucumbers

4. Mix together mayo, chicken and thinly sliced chicken and add to the top 

5. Dress or bring it with you if your lunch it to-go!

Things to note:

This is an easy and great recipe to make in bulk. Multiply this recipe times 5 to have lunch for the week!
